How much submission data can Lyro reach?

All of it on the account. Get User Submissions retrieves submissions for every form the authenticated key owns, with the answers dictionary keyed by question ID, so the API key you connect defines the whole surface - there is no per-form restriction in these actions.

Can Lyro show what changed on the account and when?

Get User History returns account activity records and filters them by action type or date, which is the closest thing to an audit trail here. Pair it with Get User Setting By Key when the question is what a specific setting - email, timezone, language, website - is currently set to.
